I’m running a bit low on surplus engine oil and looking to buy some. In the US, I’ve bought “Castrol Edge 5W-30 A3/B4,” but can’t find it on Amazon that ships to Europe.

Note that Amazon has different websites for different countries. I.e. when I'm in France I use amazon.fr with my normal Amazon login instead of amazon.com.
I'm sure the European members will have better suggestions, but I would check Auchan supermarkets if there is one near where you will be in France. The Castrol product labeling is a little different over there, but I think as long as it is labeled compatible with MB 229.5 (also 229.51, I believe) then it should be OK. There are some other brands listed in the Austro OME document as well.

Not sure about the Castrol. I am using Shell Helix Ultra - mostly for the reason that I can usually by it at gas stations around Europe when I am running low. That worked at least in Spain, Germany and Hungary.
If you are ever have an immediate need for oil and don’t mind mixing that might be an option for you. Just lookup a Shell gas station near you.
