I think you can have a seat belt removed and get a local FSDO to sign it off as a 337'd six seat aircraft. An A&P would be required to re-install the seatbelt -- aka not something that can be done by an owner.

My understanding is that the remove-a-seatbelt and 337 thing is something that is not uncommon for owners of 6 place aircraft like to the 206 to do to get down to a 4 seater for insurance purposes.

With the 337 the aircraft would be a 6 seater.
